I was in the airport in Los Angeles when a very large photo of a dairy cow stopped me in my tracks. The caption read “local demand will drive global supply.” As I travel, I see concrete evidence of this. My stay at Matt and Sue Simmons in Australia on their pasture pork station was amazing because of the great animal welfare for the pigs, the low cost production system, but most importantly the local demand. During my visit with Meat & Livestock Australia we also spent considerable time on this important global shift. All of our wealth comes from the consumer and they want a
connection to their food and to us – the people who raise it.
